corn and black bean salad:
ingredients:
tbsp of olive oil
small red onion, chopped
cloves of garlic, minced
scallions, chopped
pint of grape tomatoes, halved
cup of fresh lime juice

10-oz bag of frozen corn
tsp of salt
15-oz can of black beans, rinsed and drained
tbsp of sugar
directions: combine all of the ingredients and let sit for 15 minutes or until the corn has thawed. stir and serve.
