Caste systems were used a lot in the past. I'm not quit sure how to explain it in depth but i'd say it's a ranking of how important you are. The 'untouchables' would have to do jobs that no one else in the caste would do.

Traditionally in the caste system, untouchables perform types of jobs such as sweepers, washers and disposing dead bodies.

Explanation:

The untouchability is a practice of the minority group that separates them from the mainstream by the illegal mandate as that of the Dalit people that were regarded as the untouchables in the Indian subcontinent and carried out all the polluting and were prohibited from practicing the system of worship. The polluting activities, such as the fishermen, the manual scavengers, sweepers and the washermen.  These were then outlawed in the Nepal and Pakistan and the Indian subcontinent and these people were also prohibited from eating with other members , Provision of separate cups at tea stalls, separate use of the utensils. A prohibition from entering other caste homes.
