Air that is forced to rise will cool adiabatically and air that is forced to sink will heat adiabatically. the temperature changes because the pressure changes, not because of an exchange of heat. as the air rises, external pressure from the atmosphere decreases and the air expands which lowers the temperature of the parcel of air. you may remember from the textbook that when molecules are able to spread out, kinetic energy drops and temperature is just a measure of average kinetic energy. as air sinks, the external pressure increases and air is compressed which causes warming (a rise in the average kinetic energy of the molecules as they come under increased atmospheric pressure).
