Proteins are commonly the result of this reaction. Proteins consists of amino acids that are bonded by peptide bonds. These bonds are said to be metastable so they would break spontaneously but it is a slow process. These bonds can also be broken by hydrolysis where the bonds are cut by adding water molecules.
