FERMENTATION:

Fermentation is the process whereby pyruvate (a product of glycolysis) is converted to alcohol or lactic acid in the absence of oxygen. Fermentation only occurs in the absence of oxygen, hence, it is an anaerobic process. Fermentation, which is carried out by some Bacteria and yeast, uses the product of glycolysis (first stage of cellular respiration) as follows: pyruvate and Nicotinamide adenine diphosphate + hydrogen (NADH) as follows:

Pyruvate + NADH = lactic acid/alcohol + NAD+

In the above equation, pyruvate is reduced by gaining electrons to form lactic acid or alcohol while NADH is oxidized by losing electrons to form NAD+.

Therefore, in fermentation, pyruvate is reduced and NADH is oxidized.

The answer to this will be from your lab notes/procedure. it would be best to ask another student who participated in the lab as we do not know what was done, what enzyme or if the temperature is celsius or fahrenheit. if i were to guess though i'd say the rate stopped due to enzyme denturing at high temperature
