What is albumin and what is gelatin? how can one differentiate between the two?

Albumin can be described as a family of proteins consisting of globular proteins where as Gelatin can be describes as a substance which is derived from a protein called collagen.

Albumin are a class of proteins mainly monomeric proteins.

The properties of albumin are:

1.  They are soluble in water.

2. They can be coagulated by heat.

3. They are present in milk, egg white etc.

The functions of albumin include:

1. They are carrier molecules for substances for thyroid hormones, fatty acids as well as steroids.

2. They stabilize the volume of extracellular fluid.

Gelatin is a protein that is made by partially hydrolyzing collagen. Gelatin is used for making edibles like jelly. Gelatin also serves as the translucent membrane which is used for filtration  in photography.
